Canning Crazy

So lately I have been canning like crazy. Not big amounts of anything really, but 4-8 jars of various stuff. Tonight it was apple jelly, made the juice to do grape jelly tomorrow, used the pulp from the grapes to make grapplesauce, and also made spiced applesauce. Bought a watermelon for watermelon pickles later this week. Now, I want to be honest, I have never even eaten a watermelon pickle so I have no idea why I want to make them, but heck, I had never had a pickled green bean, and my husband has already eaten most of those that I canned earlier this year. I don't have a pressure canner, so am limited on what I can do, but I have also used the dehydrator quite a bit this year.
If I lived where I could have a giant garden I would love it! I think I was really meant to be a farmer.

Good watermelon pickles are to die for. I've made them in another place and time. Grandma used to make them, too. Good luck!

Where do you find the time (and the counter space) for all the canning? I used to make jam -- about a million years ago -- but with the kids grown and gone, it would just stack up in the cupboard. However, a couple more of your posts about what you are canning, and I may be forced back into the kitchen. Yum!

I did pickled beets this last weekend and after years of dehydrating and freezing, I think I have the canning bug again. All water bath though, that damn pressure monster scares me. My mom did 100's of quarts of stuff when I was growing up and well, still can't get past that beast.

Keep up the good work! Maybe we can have a potluck at one of the shows with all our canned goodies!

Wow, cool! We've canned jam a few times but I'm always afraid I'm going to screw something up in the process.

Wow - you are a canning wonder! I canned for the first time this year...if you can call making raspberry jam "canning" - lol. The watermelon pickles sound interesting - can you post a picture after you make them?
